
"Extra virgin" is a grade, not a promise. Four things that decide whether the oil in the bottle is the oil in the research.
Extra virgin is the highest grade of olive oil, defined by how it is made and by chemical and sensory limits. It is a floor, not a ceiling. Two oils can both be legally extra virgin and have almost nothing in common, in taste or in the biophenols they contain.
The research on olive oil and health was mostly done with fresh, early-harvest oils, handled carefully. If you want the oil in the studies, "fresh" is the word to understand, and it has four parts.
1. When the olives were picked
Olives picked early, while still green and unripe, hold the highest concentration of the phenolic compounds that give a good Extra Virgin Olive Oil its bitterness and pepper. They also yield far less oil, which is why early harvest is expensive and why most commodity producers harvest much later. PiroMD's olives are picked early in the season, while still green.
2. How fast they reached the mill
An olive begins to deteriorate the moment it leaves the tree, and heat in transit accelerates it. The best producers move the fruit cold and mill within hours of picking. PiroMD's olives travel to the mill in refrigerated trucks and are cold-pressed soon after picking.
3. How the oil was stored
This is the part most people never think about, and it is the biggest one. In a 2021 study in the journal Foods, researchers followed an early-harvest oil under different conditions. Kept cold and sealed, its phenolic compounds barely changed. At room temperature for three years, it lost more than 70 percent of them. After the container was opened, the key compounds fell sharply within months.
That last line is the one to remember. A bottle is opened again every time you use it. An oil that was excellent in November will be a different oil by spring.
4. What the label tells you
A harvest date, not only a best-by date. A specific origin, not a list of countries. Dark or opaque packaging. If a label doesn't give you all of this, it is not hiding good news.
