Grilled Peach Salad with Piro and Bonini

Ingredients:
- 4 ripe peaches, halved and pitted
- 6 cups mixed salad greens (e.g., arugula, spinach, or mixed baby greens)
- 1/2 cup crumbled goat cheese  
- 1/4 cup chopped toasted pine nuts
- 2 tablespoons quality Extra Virgin Olive Oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon honey
- Salt and freshly ground black pepper to taste

Instructions:

1. Preheat your grill or grill pan to medium-high heat.

2. While the grill is heating up, prepare the peaches by cutting them in half and removing the pits. Lightly brush the peach halves with a little olive oil to prevent sticking.

3. Once the grill is hot, place the peach halves cut-side down on the grates. Grill for about 2-3 minutes per side, or until grill marks appear, and the peaches are slightly softened. Remove the grilled peaches from the grill and set them aside to cool.

4. In a small bowl, whisk together the Extra Virgin Olive Oil, balsamic vinegar, honey, salt, and pepper to create the dressing.

5. In a large salad bowl, combine the mixed greens, crumbled goat cheese and toasted pine nuts.

6. Once the grilled peaches have cooled slightly, cut them into slices and add them to the salad bowl.

7. Drizzle the dressing over the salad and toss gently to combine, ensuring the ingredients are evenly coated with the dressing.
