Each olive harvest tells a story — one of climate, timing, and the hands that guide the process from grove to bottle. For Olio Piro, 2025 is a year defined by patience and precision.
On Monte Amiata, the volcanic slopes of southern Tuscany where Piro’s groves flourish, a cool, rainy spring gave way to a dry, sun-filled summer. The result is an olive crop showing remarkable balance and purity. “This year, we expect balanced yields and outstanding phenolic levels,” shares Romain Piro, Director of Production. “The trees responded beautifully to the conditions, and fruit quality looks excellent.”
Harvest will begin about ten days later than usual — a delay that reflects slower, more even ripening and promises extra virgin olive oils of remarkable depth, freshness, and longevity.
A Season Guided by Precision
Every decision at Olio Piro begins with a single purpose: to protect the natural antioxidants and flavor integrity of early-harvest olives. From cultivation through milling, each step is carefully calibrated to maintain the purity that defines Piro’s signature profile.
This dedication shapes both of Piro’s expressions: Piro, the high-antioxidant finishing oil celebrated for its vivid flavor and complexity; and Cucino, the heat-friendly extra virgin olive oil crafted for cooking. Though formulated differently, both oils share a common foundation — a commitment to balance, quality, and consistency.
“This year’s conditions have favored precisely that,” Romain explains. “The combination of a mild spring and warm, dry summer gave us fruit that’s perfectly suited for both Piro and Cucino. We’re seeing the same harmony that characterizes our best years.”
Looking Ahead: The Medicinal Olive Oil Project
Building on its expertise in high-phenolic olive oil, Piro is developing a new project focused on the medicinal potential of extra virgin olive oil. The upcoming formulation will feature an exceptionally high polyphenol concentration of around 1,000 mg/kg, representing a breakthrough in preserving the oil’s natural antioxidants and health-promoting compounds.
This project continues Piro’s mission to push the boundaries of quality, showing how early-harvest precision and controlled extraction can produce oils that unite extraordinary flavor and documented wellness benefits.
