Hosting Chef Ciro in Aspen was Chef Vincenzo Salvatore, a master of precision and balance and the driving force behind Angelo's Aspen Hospitality. Known for his meticulous attention to detail, Chef Salvatore allows the integrity of high-quality ingredients to take center stage. His refined execution and respect for tradition reflect his commitment to showcasing the best of Italian cuisine, one dish at a time.

Showcasing Mastery with Fresh Fish and Seafood: The Perfect Finishing Touch

The evening featured a spectacular seafood-focused menu, crafted to highlight Chef Ciro Scamardella's unparalleled expertise with innovative Italian cuisine and fresh, high-quality ingredients. The menu began with Italy Meet Peru, a vibrant dish of Otoro Tuna with radish in carpione and honeydew melon, accented by leche de tigre and chile mex, showcasing a harmonious fusion of Italian and Peruvian influences. This was followed by Re-Fresh, an exquisite Hamachi crudo served with daikon and a sweet yuzu sauce, capturing the perfect balance of acidity and freshness.

The main courses continued to impress with Strait of Gibraltar, featuring Red Shrimp Carabinero paired with Shishito charcoal, chimichurri sauce, and a hint of Ras el hanout, delivering a bold and aromatic experience. Un Cileno ad Amatrice showcased the chef’s creativity with Baguette Crust Chilean Seabass, paired with Guanciale Biellese, yellow tomato sauce, and grilled spring onion, combining elements of Italian tradition with modern sophistication. The grand finale was Chiamala se vuoi "Sfogliatella", a citrus burnt basket cheesecake adorned with orange flower sauce and buffalo yogurt gelato, offering a refined and refreshing conclusion to an unforgettable meal.

Piro Extra Virgin Olive Oil played a starring role throughout the evening, particularly as a finishing oil, where it was celebrated for its exceptional pairing with white fish and seafood. Its vibrant, peppery profile enhanced the natural flavors of the Hamachi crudo, while its smooth, complex finish brought depth to the Chilean seabass. The oil’s bright, grassy notes harmonized beautifully with the briny, rich elements of the red shrimp, adding an elegant touch to every dish and elevating the dining experience to new heights.
